清金伯採收秋冬種植的無毒蘿蔔,切成長條狀,以鹽巴醃漬,平鋪在竹篩上日曬出水、翻面並排除水份,在熱辣的陽光下反覆執行多次,並運用石頭壓住,使其持續出水。蘿蔔乾去除大量水分後,能長久存放,是農家的智慧。

保存方式

於乾燥密封的狀態下,可常溫放在陰涼處保存三個月,取用時需保持乾燥、避免受潮。

食用前用清水簡單沖洗掉灰塵,如不喜吃重鹹,料理前建議先泡水30分鐘。
可做成菜脯蛋、菜脯炒肉絲、辣炒菜脯、菜脯辣炒豆干丁等。
